Focaccia Bread with Cherry Tomatoes

A simple homemade bread is perfect for any day of the week.

  • Fine chopped rosemary

  • 3-4 cherry tomatoes, sliced

  • Half red onions, sliced

  • 1 tsp dry herbs such as oregano. I used Zaatar spice

  • 50g grated cheddar or crumbled feta cheese


  1. Heat oven at 180C.

  2. Oil an oven tray and place the dough (above).

  3. Stretch the dough into an oblong bread. You may want to add extra salt or seasoning if desired.

  4. Layer all the remaining ingredients on top of the bread dough pressing gently into it.

  5. Bake for 20-25 minutes until the bread has risen and golden colour.

  6. Whilst the bread is still hot, drizzle over 1-2 tbsp olive oil. Cut into squares and serve warm or cold with extra olive oil, if you like.
