This is my take on this popular Spanish dish, Paella, which I absolutely enjoy every time I am in Spain. I love making this at home because its so easy and filling. You can add anything you fancy from Shrimps to Chorizo, chicken, fish and vegetables.
The saffron adds a unique flavour but you can omit this out if you don't have any.
Here's the Ingredients you will need.
2 cups paella rice or any short grain rice 300g Boneless chicken thigh 2 onions 2 clove garlic 100g large shrimps 200g white fish 1 tsp saffron, soaked in 1/4 in water 1 ltr Chicken or vegetable stock 1 tbsp paprika 1 fresh tomato, chopped 1 cup passata 7-10 tbsp olive oil Salt to taste fresh chopped parsley, chopped.
