Chicken Kofta Kebab

Chicken Kofta For quick and easy chicken kofta I make my own chicken mince. Its so easy to make, I just bung the meat into my food processor and grind it for few seconds and its done! Just make sure you don't grind it for too long or you'll get chicken paste 😳. Also it's best to use boneless thigh meat as the fat makes it easier to mould and shape the kebab. 500g boneless chicken mince 2 tbsp breadcrumbs 1 small onion, diced or 1 tbsp dried 2 garlic cloves, minced 1 tbsp parsley 2 tsp coriander 1 tsp cumin ¼ tsp chilli powder or chilli flakes ½ tsp paprika Salt to taste Oil to shallow fry (optional) METHOD 1. Place all ingredients in a large bowl. Mix together until all spices and onion are well blended into the meat. 2. Using your hands, shape the meat into gold ball size, and flatten into a round shape, oblong shape or whatever shape your prefer. Pan fry: You can shallow fry these with 4 to 5 tbsp of oil, cook them 5 minutes on each side. Grill: Lightly grease a bakingntray and grill the kebabs approximately 4 to 5 minutes each side.
